CABBAGE |
Cabbage is an edible plant form the brassicaceae family. It is a bi-annual vegetable, grown as an annual, whose oval, oblong, smooth, curly or circular leaves, depending on the variety, form a characteristic compact heart. There are two types of cabbage: Early and Late. Early cabbages ripen in 50 days and produce small harts, for immediate consumption. Late cabbages ripen from 80 days, produce much larger hearts and are intended for winter provisions. The best known varieties are the Savoy Prince, Savoy King, Retosa and Melisa. They are consumed both boiled and in salads and can be preserved cooked, frozen after blanching and even prepared as sauerkraut (fermented cabbage used as a condiment or accompaniment). Cabbage is rich in vitamins C and A, calcium and beta-carotene, as well as containing a high fibre content. |
