Garlic is a plant apparently native to western Asia, cultivated since over 7,000 years ago. It measures around 30cm and the white bulb is formed by a head divided into segments which are usually called “garlic cloves”, covered by a fine film which may be white or a more reddish tone. Garlic planting is carried out in winter or at the start of spring, and harvested in the month of August. At the end of the harvest, the bulbs of garlic must be kept in a place which is not too hot or too cold, and with good ventilation, where they will dry for several weeks. It has numerous medicinal properties and is considered one of the most important curative vegetables in the world. Garlic helps to prevent and cure illnesses in respiratory passages, such as bronchitis, as well as treating high blood pressure and poor circulation. It has been used traditionally for the treatment of callouses, warts, arthritis, neuralgias and even sciatica. Garlic, for its characteristic aroma and flavour, is used whole, sliced or chopped in dishes of the Mediterranean diet. It is served as a condiment for pasta, vegetables, sauces, ratatouille, meat and fish. |
