Like cabbage, lombard belongs to the family of brassicaceae, and is also popularly known as lombard cabbage, red cabbage or purple cabbage. It is very similar to cabbage, but less sealed and more compact, with a bright colour with a purple tone. It has a slightly sweet flavour which is highly appreciated, as it is characterised by the attractiveness of the magenta or dark purple colour of its leaves. Lombard is a select variety of the common cabbage cultivated throughout Europe. It is rich in sulphur compounds, vitamin C and citric acid, contains protein, lipids, potassium, phosphorus, iron and sodium, and is very low in calories. It provides a lot of fibre, which have laxative properties, and is a significant source of antioxidants. Normally, lombard is boiled, and is a very good ingredient for various dishes, being typical in the Christmas period. |
