TURNIP |
The turnip is a vegetable with few calories, due to possessing an abundant quantity of water and very few carbohydrates, being a good source of fibre. It contains a good quantity of vitamin C, and unlike other vegetables in which it is abundant, it lacks pro-vitamin A. The turnip can have a round, flat or cylindrical shape, depending on variety, and its average weight varies between 100-200 grams, with a length of between 10 and 15 centimetres. The turnip seemingly originates in Europe, although some experts maintain that it comes from central Asia. In its wild form it was the main food of the first inhabitants of Europe, who began to cultivate it four thousand years ago. It was also highly valued by the Greeks and Romans. The best known varieties are: the Martillo Virtudes, white and elongated, narrower in its central area; and the Japanese or Kabu turnip, with a more intense flavour. The consumption of turnip improves the function of the thyroid gland, which regulates metabolism. Folates act in the production of red and white blood cells, in the synthesis of genetic material and in the formation of antibodies of the immune system. |
