The bulgina variety is used, as the leek is a product from the liliaceas family and therefore rich in volatile sulphur essential oils, giving its characteristic spiciness. Therefore, for this product, leeks with the highest possible water content are sought, with the right amount of fibre and sulphurised oils to provide the right tenderness and minimum spiciness possible, with a smooth flavour. As in previous cases, this is a very nutritional product, with a high concentration of vitamins and minerals, notably potassium and magnesium. It is also a great source of folates and vitamin C and B6. |
